  1. Combine tuna, corn, celery, parsley and mayonnaise in a bowl.
  2. Spread 4 tortillas with tuna mixture, top with cheese and cover with the four remaining tortillas.
  3. Heat one at a time in a sandwich press for 2-3 minutes, or a dry fry pan (turning once) until golden.
  4. Cut into quarters and serve with salad and wedges of fresh lime.
