  1. Preheat a sandwich press.
  2. In a small bowl mix together the olive tapenade and diced tomato. Season to taste with salt and pepper.

  4. Carefully place the filled pitta into the sandwich press and lightly toast, making sure the filling does not fall out.
  5. Serve warm.
