  1. In a large mixing bowl, mix all the ingredients for the filling together until fully combined.
  2. Heat the croissants in the oven for 5 – 8 minutes.
  3. Spoon 1 heaped tablespoon of the filling into each croissant. Garnish with lettuce leaves, sliced cucumbers and slices of hard boiled eggs.
