Sirena La Vita Lite Nicoise Salad

Made with Sirena La Vita this is an even healthier version of the classic French salad.

Ingredients:
  • 1 x 185g Sirena La Vita Lite Tuna in Oil (drain and retain Oil)
  • 4 small new potatoes (boiled and cut into quarters)
  • 12 small black olives
  • 2 hard boiled eggs (cut into quarters)
  • 150g French beans (blanched)
  • 4 anchovy fillets
  • 6 cherry tomatoes (cut into quarters)
  • 100g mixed lettuce leaves
Method:

Combine all the above ingredients in a bowl and dress with combined retained oil, white wine vinegar, Dijon mustard, salt and pepper.
